Roasting chestnuts is one of those deceptively simple things — three steps, but each one matters. Skip the scoring and you'll have an exploded mess. Pull them out too early and the skin won't peel. Get it right and you've got something genuinely great.
Here's exactly how we do it, and how to avoid the common mistakes.
What You'll Need
- Fresh or cured roasting chestnuts (our roasting chestnuts are ready to go)
- A sharp paring knife
- A baking sheet
- Oven or open fire
- A kitchen towel
Step 1: Score an X on the Flat Side
This is the most important step. Use a sharp paring knife to cut a shallow X through the shell and into the skin on the flat (bottom) side of each chestnut. Don't cut all the way through the nut itself — just through the shell.
Step 2: Roast at 425°F for 25–30 Minutes
Lay chestnuts flat-side up on a baking sheet. Roast at 425°F (220°C) for 25–30 minutes. You'll know they're done when the shells curl back at the X and the interior is golden and tender when poked.
For an open fire or grill: use a chestnut pan (it has holes in the bottom) or wrap loosely in foil. Turn every few minutes for 15–20 minutes over medium heat.
Step 3: Peel While Warm
This is critical. Wrap the hot chestnuts in a kitchen towel and let them steam for 5 minutes. Then peel immediately — shell and inner skin both. If you wait until they cool, the inner skin adheres and becomes nearly impossible to remove.
Work fast and peel while you can still just barely hold them. Cold chestnuts = frustrating chestnuts.
Serving Ideas
- Eat them plain — they're sweet, earthy, and satisfying on their own
- Toss with butter and fresh rosemary
- Slice into a warm salad with roasted Brussels sprouts and pancetta
- Fold into stuffing or dressing
- Puree with a little cream for a simple chestnut soup
